Lung ching tea or Longjing tea (龙井茶; lóngjǐng chá) -  A Specialty Green Tea from China

Lung ching tea or Longjing tea (龙井茶; lóngjǐng chá) is a specialty green tea from China. The name means “dragon well”, from the name of the well that traditionally provided the best water for making this tea. This variety is produced in Zhejiang Province, by a pan-frying process that it is done mostly by hand, and causes the leaves to fold in on themselves and resulting in a characteristic sword-like shape.

Lung Ching Tea

In this case, the pan-frying serves the same purpose as roasting, which is to preclude fermentation by the natural enzymes present in the tea leaves. Lung ching tea has a strong flavor, described as a sweet green flavor like steamed baby bok choy or freshly cut grass, with a note of lightly toasted walnuts or chestnuts, and it has a rich, buttery finish with a persistent aftertaste.
